Yielding firm opaque meat that can be cut into steaks, loins, or thin slices for sashimi, wahoo is one of my favorite fish to target and eat. It is excellent grilled, seared, smoked, sautéed or raw. Wahoo average three to five feet and 25 to 60 pounds, but fish exceeding the 100 pound mark hit south Fl. docks every year. Targeting these fish in depths from 125 – 600 feet of water along, color changes, reefs, and ledges, using natural or artificial baits, trolled deep, at speeds from 6.5 to 15 kts. often produce double header strikes at break neck speeds from sushi grad torpedoes.

Lightning fast speeds, skyrocketing attacks with pin point accuracy, and razor sharp teeth are the basic characteristics of king mackerel. A dense, grayish, oily meet perfect to cut into steaks, loins, or cubes, kingfish gets rave reviews when prepared on the grill, fried, or smoked and used for fish dip. Kingfish school in large numbers and hang around bait schools, primarily near reefs, wrecks, and along beaches. With the right conditions, Stuart Fl. kingfish charters can offer lock and load action that will keep everyone one on their toes.
Averaging between 6 and 15 pounds, with 30 to 40 pound fish common, and boasting a Fl. state record of 90 lbs. Kingfish have earned their place as a highly sought after tournament fish. They can be found in all depths of water but are most commonly targeted along beaches shallow water reefs and ledges from 30 feet to 130 feet. Trolling subsurface baits or spoons off our Cannon TS10 down riggers or behind planners is an effective way to catch them, but live baiting and chumming while using the ultra lights can provide "four and five pole bendos" of quality drag screaming light tackle action.

Everything likes the bait schools that the kings hang around and it's not uncommon to catch sailfish, cobia, bonita, dolphin, barracuda, and other bonus species while we target these awesome light tackle testers.
Stuart Fl. Reef And Wreck Fishing Charters for Amberjacks:
Excellent in smoked fish dip, good on the table and pound for pound one of the strongest fish we have, over the last 10 years Amberjacks have gained a lot of popularity with our South Florida fishing charters. AJ’s are the knights of the wrecks, and guard their residence with vengeance. Good luck dropping a big live bait to the bottom and getting it back up to the top when these brutes are on guard. Large schools of big, aggressive, great fighting, and good eating fish stage over Florida’s reefs and wrecks year round making Amberjacks a great “go to” fish.
First time anglers, birthday boys, bachelor parties, pro athletes and “Leroy Brown”… will be beggin’ for mercy as they battle these brutes, or as we call them “Reef Donkey’s” which are common in the 25 to 65 pound range with a 142 lb Fl. record caught just south of here. This might be one style of fishing where it’s more fun to not be the angler. You’ll be laughing so hard you’ll get cramps, as you watch your friend’s grunt, cry and shout profanities they fight these amazing fish. A tug o war with over 20 pounds of drag, on 50-150 lb. class bottom rods, spooled with 80-100 lb braid, bent in half like an Ugly Stick commercial. Keeping them out of the bottom or the wreck is the main mission, so the first 20 feet is the most important. After that a steady winching to the top will get them boat side for pictures and either a release or the smokehouse.
